Sidvudvu is the cuisine from Swaziland, made from Pumpkin. It accompanied with mixes from other vegetables and cereals like maize.

Swaziland is one of the small country in the southern part of Africa continent. It is also among the countries to withhold her culture throughout the generations. Here in Swaziland, it’s okay for a woman to respect even a small boy, it’s forbidden for a woman to eat eggs and also to eat with a group of men. South Africa, Mozambique, Zambia are among the other countries that kept their culture well. Swaziland also cultivates pumpkins at local level, mostly for food and less to say for export.

Pumpkins in Swaziland are largely used in many dishes considering that traditional dishes are prepared with vegetables and cereals at large.

There are vegetables like Umbidvo wetintsanga and Mboa(from Mozambique) that are mainly prepared from Pumpkin and pumpkin leaves.

Preparation

nutmeg

  • 1 butternut squash
  • 1/4 kg of maize
  • sour cream
  • ½ teaspoon of cumin (not necessary)
  • pumpkin seeds
  • salt

Cooking procedures

  • Take butternut squash and peel it, chop into small pieces and roast over medium heat fro about 20 minutes.
  • Boil water of about a half a litter and put in maize, nutmeg, salt and cumin. Mix them until the mix thickens like heavy porridge.
  • Once the squash attain a golden color, remove from pan into the mix of maize, nutmeg, salt and cumin.
  • Add in sour cream, stir until they make a uniform smoothness mix. (stirring process should not be faster than normal).
  • It is a tricky to mix them well, make sure the mix is somehow thick, so that maize never bounce to bottom.

Enjoy the cuisine with friends or family, since the recipe is in a porridge form, many prefer it plain with a cup of sugar aside, serve it warm.
