Ewa Agoying is a Nigerian meal commonly eating in Nigeria. In one of my articles on local cuisine, I wrote on Tukuni. With Tukuni, it is spiced pounded potatoes with beans. So, don’t get confused. This is commonly eating in Cameroon. But with Ewa Agoying it is commonly eating in Nigeria. This meal is eating with barely fried pepper in palm oil with onions. You could include tomatoes, that is if you which. The main ingredient there is pepper. After it is cooked with other ingredients, it is served with the marched beans.

Ingredients

  • Pepper
  • Salt to taste 
  • Maggi
  • Onions
  • Ginger. {optional}
  • Beans
  • Palm oil 

Procedure

  • Pick the beans. Select the beans separating the good beans seeds from the bad one.
  • Rinse the beans and drain.
  • Put in cooking pot add your water boil for about 35min under intensive heat
  • Check if it is half done.
  • If it is, remove and drain water. Rinse with clean fresh water then put back into the pot with water, and boil until it is fully ready. This could take about 1hr for the beans to be fully ready.
  • Put in a mortar, and with a pestle, mash the beans. 
  • Put palm oil in a pot and stand on gas under low heat. 
  • Put your sliced ginger in a blender with pepper and onions and blend.
  • Turn blend ingredients into the bleached oil. Allow it to boil well. Add whole roasted or parboiled pepper if the one you blend isn’t enough or if you want more.
  • Cook for about 5-10min. Serve with beans as seen above or in any way that suits you.
