Origin of dish

Ingredients

  • Ghee – ½ cup
  • Onion (grinded) – 2
  • Garlic – 1 ½ tsp
  • Ginger – 1 tsp
  • Trotters – 6
  • Red Chili Powder – 1 ½ tsp
  • Salt – 2 tsp or to taste
  • Turmeric powder – 1 tsp
  • Yogurt – 1 cup
  • Water 6-7 cups
  • Whole Spice Powder – ½ tsp
  • Fresh Coriander (for garnishing)
  • Green chilies (For Garnishing)
  • Ginger (Julienne) (For Garnishing)
  • Lemon Juice – 1 tsp

Method of Cooking

  • First we should wash trotters and get it clean before cooking.
  • Bring a large frying pan, put ghee in it and let’s heated it.
  • Then put grinded onion and frying until its color seems like light brown.
  • Include ginger and garlic paste and cooking to 2 – 3 minutes.
  • Add trotters in the pan and mix it well after adding then fry it for 1 – 2 minutes.
  • After that add red chili powder, salt as required and turmeric powder and cooking for almost 5 minutes.
  • Include yogurt and blend well until oil separates.
  • Now do level of flame low and add 6 to 7 cup of water into it and cover it.
  • Leave it for 3 – 4 hours until trotters are soft.
  • Include entirety spice powder and put it on stew for 10 minutes or until wanted consistency.
  • Let garnish it with fresh coriander or green chilies if you wanted.
  • Your MUTTON PAYA (Trotters) is ready to eat with chapatti or rice anything you like.

  • Preparation/Cooking time: 4 – 5 Hours
  • Serving: 5 – 6 Persons.
