Pakistan – Traditional Chicken Sajji with Yogurt Dip and Salad

Introduction

Mutton Sajji is the most unique dish in Pakistan.It is different from all the dishes and the unique style of cooking is so interesting. The whole chicken is filled with spicy and yummy rice. Chicken is roasted over coal to give it a nice golden look and some smokey flavor to the chicken. The chicken is cooked without any spices but the rice is so spicy. The combination of saltish chicken and spicy rice attracts the people. Sajji is always made on coal. Sajji chicken is different because the skin of the chicken is not removed. There are many types of sajji like:

  • Mutton sajji
  • Baloch sajji
  • Spicy sajji
  • Saltish sajji
  • Afghani sajji
  • Punjabi sajji

The aroma and the way of serving attracts the people. It is served with different types of dip and salad but the yogurt dip is the best. The different colors of salad add colors to the whole meal. You can also eat it with naan but some people prefer butter naan. It is healthier way to eat it with salad because salad is a natural source of fiber and it controls your weight.

There are so many types of yogurt dip but zeera yogurt dip is best to eat with sajji. Yogurt is high in protein and it also help in digestion.

Ingredients for making sajji chicken

  • Chicken 2 whole
  • oil 4 tbsp
  • salt 2 tsp
  • green chili 3

Method of cooking

  • Take a pan add oil, salt and green chili and saute for 2 minutes
  • Now take a large bowl and add chicken in the bowl and then add the green chili and oil that we prepared and cover it for 3 to 4 hours.

Ingredients for making rice

  • Rice 2 cups
  • garlic paste 1 tbsp
  • ginger paste 1 tbsp
  • turmeric 1 tsp
  • bay leaf 4
  • green chili 4
  • garam masala 2 tsp
  • red chili 2 tsp
  • yogurt 2 tbsp
  • onion (sliced) 1 large
  • salt 1 tbsp
  • cloves 4
  • water 4 cups

Method of cooking

  • Take a pan and add garam masala, red chili, salt, turmeric,ginger paste and garlic paste and saute for 10 to 15 minutes.
  • Now take another pan and add bay leaves, cloves and the spices that we prepared.Now take a cooking pot and add all the spices, rice,water,yogurt and cook for 15 to 20 minutes.
  • Now cover the lid and cook for 10 minutes when the rice is cooked add the rice to the chicken that we marinated.
  • when the chicken is filled with rice take some charcoal pieces and turn on the fire now place the chicken on the steel skewer and cook it over charcoal fire. Brush it with oil.When the chicken is cooked and has a golden brown color transfer the chicken to a plate.

Ingredients for making yogurt dip

  • yogurt 2 cups
  • cumin seeds 1 tsp
  • salt 1/2 tsp
  • ajowan caraway 1 tsp
  • coriander leaves crushed 1tsp

Method of making

  • Take a bowl and add all the ingredients and mix well.The yogurt dip is ready.

Ingredients for making salad

  • onion (sliced) 1 large
  • tomatoes (chopped) 2 medium
  • cucumber (chopped) 2
  • capsicum (sliced) 1 small
  • carrot (sliced) 1 medium
  • lemon juice 3 tsp
  • vinegar 2 tsp
  • salt as required

Method of making

  • Take a mixing bowl and add all the ingredients and mix well.The salad is ready.
