Pakistan – Traditional Moti Pulao (Mutton Meatballs With Spicy Rice) With Raita

Introduction:

Moti pulao is actually soft and moisture spicy rice with small meatballs in it.This is the most flavorful and delicious lucnch or dinner. The hot spicy rice with mutton meatballs in it is the most famous in Pakistan especially in Karachi. The flavor of meatballs are spicy and the texture is little dry because the rice is moist so it goes very well together. The flavor of rice is simple and it s very light lunch. Some people have a heavy breakfast in the morning some so they want something light as a lunch. Some people like to garnish it with some fresh green coriander and a little bit of chopped green chilies the aroma of meatballs, rice, fresh coriander and green chili is so delicious. There are many types of pulao like.

  • kabuli pulao
  • chicken pulao
  • beef pulao
  • meethi pulao
  • kofta pulao
  • kashmiri pulao
  • basanti pulao
  • vegetable pulao
  • keema pulao etc

This is all the types of pulao but the most famous is moti pulao.This dish includes a large variety of spices to make it aromatic.Some people use food color or saffron to give a nice yellow color to the rice.This dish takes a little bit longer time to make then other dishes.This is prepared by adding different types of spices like red chili flakes, red chili powder, salt, black pepper, turmeric, dry coriander, cumin etc.The best way to eat moti pulao is with raita( yogurt dip).The sweet creamy raita with light and simple rice is all people favourite combination.Some people like to add green chili raita, Sweet apricot raita, zeera raita but the best option is yogurt raita.

Ingredients

  • mutton mince 1 kg
  • salt 2 tsp
  • red onions 2 medium (sliced)
  • coriander 2 tbsp
  • roasted cumin 1 tsp
  • red chili powder 2 tbsp
  • garam masala 1 tsp
  • plain flour 3 tbsp
  • oil 1 cup
  • ginger paste 2 tsp
  • garlic paste 2 tsp
  • green chili 3 (chopped)
  • tomatoes 2 large (chopped)
  • yogurt 1 cup
  • mutton stock 2 cups
  • rice 2 kg

For garnish

  • green coriander (chopped)
  • green chili 2 (chopped)
  • lemon juice 1 tbsp
  • lemon slices

Method of cooking

Step 1

Take a deep cooking pot and turn the flame medium and then add chicken stock, rice, 1 onion slices, yogurt, salt ,coriander, oil and cover the lid and turn the flame low and then let it cook for 30 minutes.

Step 2

Take a tray and add mutton mince, cumin, red chili, garam masala, plain flour and then mix until all the things are fully combined.Now take 2 tbsp of mutton mince and make small balls.Then take a pan add oil and turn the flame medium and add the meatballs in the fry pan and fry until golden brown.

Step 3

Now give the rice mixture a stir and then add tomatoes, ginger paste, garlic paste and green chili and again cover the lid for 30 minutes.After 30 minutes the water is almost dry then turn the flame low and place the meatballs on the tp of the rice and cover the lid for 15 minutes.

Step 4

Now take a dish and place the rice in the dish and garnish with a lemon juice, lemon slices, coriander, green chili.

Ingredients for making raita

  • Yogurt 2 cups
  • Tomatoes (chopped) 1 medium
  • onions sliced 1 small
  • cucumber 2 (chopped)
  • salt 1 tsp
  • black pepper 1 tsp

Method of making

Step 1

Take a large bowl and add all the ingredients and mix well until all the things are fully combined.
